Hello Everyone. I just purchased a new WSM 18 and the because I've watched too many (or not enough) videos the WSM 18 package from Hunsaker.
I have a Weber Performance 22 and a Homer Simpson Smokey Joe that are both over 20 years old, and a Weber 2200 Q that doesn't get much use.
I've done a lot of grilling but zero smoking.
Its winter here but I have intentions of doing my first smoke soon. I do grill outside in the winter.
I think my first go will be a whole chicken and try to get used to the smoker. As its cold, I thought I would forgo the water and use the Hunsaker vortex defuser.
My primary charcoal is Kingsford briquettes and I lite with a 20 year old Weber Chimney.
I will say that I spent 2 months trying to decide between a barrel, an Oklahoma Joe, and the WSM. Decided on the Weber because my old Webers are still as good as the day they were new,

Have you been impacted by the miserable weather that has passed in that direction? Get a couple of pork butts and get the smoker started developing the requisite gunk to seal up some of the “new smoker” leaks which are unavoidable.
Once you get started, you will have more fun that you thought possible.
I must say some folks try to make the process much more difficult than it needs to be but, you will find what works for you.
I really like my ThermoPro TP8 remote two probe thermometer. Something like that will make life much more pleasant when you can monitor the temperatures from the comfort of your chair(bed in an overnight situation)when the weather isn’t accommodating.
Remember, there are no stupid questions except the one that is not asked. This place will help you figure out what can make life easier, most of the time. But, it’s all fun!

I didn't mention it but I did buy the Thermopro TP8 as well, along with heat resistance gloves.
All I lack is an apron and a chicken, pork butt, and the courage to jump in.
 
Welcome aboard, you will enjoy that WSM, used mine this last Saturday although our weather was and is much warmer than yours.
I smoked a 2.9 lb chuck roast to make chilli out of it. I made one of these afew weeks ago and was asked to do it again as the family does not own a smoker(yet).
It came out very good and they loved it. It is relaxing to be able to make something others enjoy.

You can buy courage in 750ml bottles. And you needn’t spend a lot either for a basic version.
You don’t need an apron, in the weather out there, a parka might be better!
I say snag a butt and get it on there! Stay outta the wind!!
