Hey y'all, thanks for the advice as I bought one of these and dove into the world of charcoal grilling! Love this this so far, and the pulled pork was top notch.
The snake lasted about 9 hours, and I opted to throw in the oven to get up to 200. Pork was rubbed with equal parts salt, pepper, and garlic powder, and I used chunks of pecan. This had way better bark and smoke flavor than any time I did this on my Traeger. Awesome purchase! Note, this is a boneless shoulder from Costco, which explains the weird shape.
Converted to charcoal! But the Genesis stays.
