Well I finally got me new Hakka stuffer and couldn't be more pleased with it! Cost about $150, 10 pound capacity, 2 different speeds, air release valve in the plunger, and its heavy enough that you don't need to clamp it to the table. This thing makes it so much easier to stuff the casings. I did two different batches with the LEM summer sausage kits. The left is jalapeño summer sausage with cheddar cheese and the right is just the regular summer sausage spice pack with cheddar in it as well. I have them on my WSM right now with some cherry wood. Now the hard part of waiting for about 4ish hours.....
