Hey all! I've been lurking in the background checking out the forums, mostly the WSM section, for the better part of the May. It all started because I smoked my first pork shoulder on my 22" OTG kettle on the 4th and while it turned out tasty, it cooked for 10 hours (3 hours longer than what I was told to expect) and it wasn't as tender as I'd hoped for it to be (probably could have used another hour or two but guests were getting hungry).
After that cook I remembered seeing the WSM a few years ago when I was in the market for the OTG. It didn't take long for me to become obsessed with the idea of getting a WSM of my own. Then there were the questions of what size, how would I use it (i.e. what besides pork ribs and shoulders would I cook), and would I actually use it enough to justify the cost (to myself) and having a third Weber (to my wife).
Long story short, I spent plenty of time looking through the forum for operating advice and trying to decide which size to get. Eventually the wife convinced me that she was "on board" with the idea of a smoker, and to celebrate WSM Smoke Day 9, I went to our local Ace (because the were the only place to have both the 22.5" & 18.5" for a good side-by-side comparison) and brought home my new 18.5" WSM!
