New Geek Questions re: WSM


 
Rich/Tony/Brian: Thank you for the encouragement. I don't mind experimenting, and I certainly like having fun. BUT, it's the idea of spending money on [whatever-is-on-the-cooking-grate] and not having it come out right that bothers me. Still, I intend to do ribs on the WSM whenever the opportunity presents itself. I'm already teed up for steak on my kettle. After having read all the posts in this forum and in others, I don't feel so nervous about a low 'n slow cook anymore. Whatever is going to happen is going to happen. I basically told myself that anything, except for the steak, that can be done is 15 minutes or less is getting done on the gas grill; anything between 15 minutes and 1/2 hour could go either way, depending on the weather and how much time I have [and anything between a half hour and an hour is up in the air at this point]; and anything more than an hour, I'm thinking, will be done over coals.

I have some friends down here who hail from the great state of Massachusetts; and I promised them a Boston Butt on the smoker. So, I have to deliver soon, maybe in November. I'll post pics if/when it happens.
 
But there are many kinds of engineers so we all think a little differently at least, here’s an example.

What is the difference between mechanical engineers and civil engineers? Mechanical engineers build weapons. Civil engineers build targets.

lol... so true. I haven't heard a good civil engineer joke in YEARS, of course that's probably because I work at an environmental firm run by Civils. Oh well! Thanks for the good laugh!
