Need some input on ribs for this afternoon

Going to do 1 rack St. Louis style this afternoon.

Here's the plan:

Fully packed ring of RO Lump Minion method with 3/4 Weber chimney of lit, foiled clay method target temp of 275.

Question for timing of supper, how long will it take?

At 225 it's usually a 4.5 for me, never tried this at 275.

Any advice would be appreciated on this method.
 
Wow Glenn. A single rack with a full ring of fuel?

Good luck. I would only be guessing at time for the ribs at 275. Any reason you're doing them higher this time?

I always do a full ring, except for small chicken cooks on my WSM, with lump I can reuse with ease.

The reason for 275 is multiple folks on here talk good about that range and Mr. Harry Soo says he does ribs and chicken there as well. I may be wrong but I think this temp will nail the texture I'm looking for.

I'm doing a similar smoke with beef backs instead. Shooting for same temp. I thinking I'm gonna go about 3-3.5 hours. Thoughh I used only half a ring on lump. Don't forget the pics. Good luck
