Need new ideas

I have been cooking alot the last couple of weeks. I need some fresh ideas. I have done roadside chicken, asparagus, turkey breast, carnitas, hamburgers, steaks, chicken breast, mac n cheese among a lot of other basic stuff. I found a New Braunfels on craigslist for free and am halfway thinking about trying it out. Im not trying to be a traitor.
 
ahhh, you're in luck, your post has gained the attention of some who likes try "new things."

suggestion 1:

try these with a side of fried rice.
 
Ive made moink balls in the oven once. Thats a good call. I might throw a fattie in there with it also. Im not sure about the New Braunfels and they would be a cheap short run. On the cookbook front, all I read is cookbooks. I read them like normal people read novels. I must have 200-300 of em. Ive made all the normal BBQ stuff. Pork Butt, shoulders, brisket, ribs, chicken, ABT's, Sirloin Tip. I do want to do a chuck roll but i dont hve but a couple people to feed this weekend.
 
If you haven't done a meatloaf yet, do yourself a favor and try one.

Didn't see any of "our friend from the water" mentioned in your list of things you have done.We might be getting into Grilling vs. Q here but you show a Kettle and a genesis in your arsenal.

if it is an offset... dont do it. those things are a pain in the butt i got a similar one that is a brinkman version. it is rusting to pieces on my back patio since no one will take it and i dont know how to get rid of it for free. i actually didnt bbq anything for myself for 2 years because it was such a pain to use. then i found the WSM.
 
The New Braunfels has a small smoker box on the side and the a vertical cabinet with lots of shelves. Im going to try to mod it a little to do some shorter low temp smokes for bacon, dry cured meat and such. I think the cabinet style with more shelves will lend itself to this if I can get some temp control

That is a New Braunfels Bandera. Great smoker after you make some mods. Most use it as a stick burner. It is not a light it and forget it type unit. Required some practice for fire control but will put out some fine Q. Do a search for Bandera 101 and you should find the mods you need. If not, let me know.
 
I saw the mods I plan on trying it this weekend "stock". Im going to do some moink balls, a fattie with some kind of stuffing (yet to be determined) and if the little store I buy meat from has them some beef short ribs. I plan on putting gaskets around all the openings, lining the firebox with fire brick and installing the baffle (but not this weekend). Im going to start another thread with favorite fattie recipe so hit that up Ive made them with different cheeses that were really good but would like to try different stuff.
