Need Help for fathers day.

Way to go gal, pork butts are pretty forgiving as you found out. Congrats

I haven't tried a brisket either and I'm thinking they might be a little more of a challenge, good advice to get proficient with pork first. After having my WSM for a couple of years a brisket is definitely something I'll try soon.
I'll be perusing all the info on briskets I can find on here.

22.5 WSM

I'm going to throw out a tip that I haven't seen here too often. I've had my WSM since 2005 or 2006. Until last year my ribs (what I cook most often in it) were inconsistent. Granted I don't use the WSM every weekend. If I did, I'd probably have been eating better ribs a couple of years ago. My problem was that until the WSM built up a nice layer of "gunk" on the inside I had the hardest time keeping temps stable regardless if I used Kingsford or lump. Just like cast iron skillets - never clean them, and the more the use them the better they work.
