Need help - about to fire up 12 lbs of spares and backs. minion or standard?

Not sure which method to use. I'm thinking minion. looking to target 250 at the top grate. Any suggestions.

As long as you are doing low and slow then I would recommend the Minion Method.

Low and slow is pretty much what I had in mind. I'm planning on 250 at the top grate, where I'll use a rib rack for the spares, and another rib rack on the lower grate for the backs. Planning on feeding the neighbors no later than 5:00, so I may foil the spares for a while if necessary.

Definitely minion. Much easier temperature control for low and slow.
