ok i'm not that new, but i usually cook my ribs @250 for 4.5 hours, however to get them done by halftime of the rosebowl i need to cook them at 300+, at what time should i start checking them at this temp, they are pork spares. thnx. haha just notice that the rose bowl game is in the 3rd, i thought it started at 5:30 pst it started at 5:30 est, haha. o well still going to cook the ribes at high temp.

Mark, for future reference, I've had good luck smoking St. Louis spares at 300* for aprox. 2 hr., then foiling til tender, which is aproximately forty-five min to an hour or so, then glazing for a few minutes.

Be careful, or you can easily overcook as they cook really fast in the foil, especially at that temp. This is not the method I prefer if I'm doing more than just a couple of slabs and using the bottom grate as well.
