Nice looking brisket. Think I better have a practice run before Smoke Day if I want to get close to that.

the knife is a wusthof classic santoku, i got it as a bday present last year, it came with a cutting board, but not the big boos board i have in the pics. It is $100 before the 20% off coupon

I have a Wusthof chef knife and I love it. It balances great and keeps it's edge. I do like the santoku style as well!

Funny, Bristol farms had ribeye wagyu beef on sale for 20/lb this week, So I grabbed a steak (1.3lb) to cook for myself, but right next to it were SRF wagyu briskets. 12 bucks a pound I believe. I made a mental note to think about grabbing one in the future to smoke.
