Awesome lookin bird! I plan on doing my practice Turkey on the 18.5 WSM this weekend. Do anything special to get the crispy skin? Was it just the high heat?

Do not cover it while resting. I never basted it, checked the temp in 2.5 hours. Total cook time was just under 3 hours.

Kenny one last question, How did you do your charcoal to get to 325 - 350? (ex. 1 lit and 1 unlit chimneys, etc) Thanks.

I used 1 full lit chimney on top of unlit coals and gave it plenty of air to get them all going... I did occasionally crack open vent if I saw the temp get close to 325 and they would fire back up. Tried to keep my temp right around 340.
