My first smoke

My WSM arrived last week. I decided to jump right in and try a brisket on my first smoke. I used the midnight brisket recipe with mesquite briquets and pecan chunks.

I started the charcoal around 11 and it was ready by about midnight. My temps ranged from 225 to 280. I flipped and wrapped about 5 hours in at 175. I finished off 3 hours later at 195. Everyone's advice here was really helpful.I'll keep sharing my results. The food was delicious and I'm excited to try some other stuff.

Welcome, Rolando! Check out Jeff's Backyard sometime when you get a chance. I was out there visiting my cousin and had a chance to drool over the grills and smokers at his place. He had the BIG wsm and the BIG wotg, but what else would ya expect, it's Texas?

Had some Rudy's brisket while out there, too, but it wasn't quite as tender as it should've been. I love the smoke flavor they get from the oak, though, and their sauce and sausage is fantastic as well.
 
Rolando, welcome to the gang! Nice smoke ring on that there briskey. Sounds like you got her nailed with one cook. Keep up the good work.

Nice Brisket Rolando and welcome, finally someone close to Freer, Texas, GO SPURS GO and HOOK'EM HORNS, just remember one thing Rolando smoking us hazerdous to ur health so if u quit smoking i will go pickup ur wsm ok.
