My first smoke TODAY.

I got 2 full racks of baby backs from the local Amish market marinating in my fridge as I type. Doing my first smoke today on my WSM 22.5" that I got for Father's Day. Wish me luck!! Shooting for 225 degrees. High of 85 and sunny! Yay me!

Looks great! As you shoot for 225, don't freak out when you don't hit it exactly. Smoking is an art, not a science, and is really pretty forgiving. So if it's 200 some times, 250 others, and even 300 others, don't sweat it. Temp adjustments with the bottom vent take a little while. You could drive yourself crazy "chasing temperature."

HELP!!! My ribs have been on for 30 minutes and the WSM is only up to 165. I'm afraid to cook them on too low a temperature. Should I be worried? Do I need to add more lit coals and how would I do that with the water pan in the way?

I hate to waste good meat. HELP!
 
Well gosh, that's gotta be good meat, it's Amish fer christs sake!

I left some info in the other post. Don't sweat it. I must have destroyed 600lbs of meat when I first started (according to my wife)

Was the WSM up to 225 when you put the meat on?
