Had a blast doing this. My buddy flew in from up North and we fired up the smoker around 10PM on Friday night. By the next morning she was just cruising...
We used a copy cat "eastern cattle rub" with cocoa and coffee grounds. Very very unique and tasty.
Then we tucked in some short ribs with a beef rub recipe from the main page
Beef Short ribs done. I have to say this was my first attempt and oh man were they good.
Not much of a smoke ring though? But it tasted great. The smoke ring missing from the top of this picture turned into our attempt at burnt ends. and the smoke ring on the bottom was about 1/8" thick.
Pre burnt ends. Some of them turned out okay and others were way too fatty. Makes me wonder if I should have trimmed more?
There are no plated pics...mostly because there was no plate! We just kept picking. We eventually started dipping the brisket in BBQ sauce but it didn't need it.
