Bought some ribs this week and decided to give the WSM a workout today.. about -10C outside, no issues at all. Ribs turned out great!

2 questions for you all..
1) I decided to throw a kitchen thermometer around the grill area - through the potato trick. At about mid point of the smoke, the WSM thermometer read 275F and the internal unit showed 220F. 50F difference? Does that make sense? Which thermometer solution are you guys using?
2) I've been thinking about getting a Stoker unit to use with my WSM. Would you guys who use them recommend them well?
