Mark, Ok you've got your first one under your belt. What did you learn? I bet a lot. Don't be discouraged!!! Try again. The meat is done when you can stick a probe, or I've even used a plastic chop stick,into the meat and feel hardly any resistance. Stick the probe in the thickest part of the meat(maybe where the point and flat meet). Also, I've used the jello test. If the meat shakes like jello when you push on it ,it's done. When you get the hang of this you can do things like pull it off before it gets too over done and finish it in the foil while resting. Good luck on your next one.
