My First Big Cookout


 
Kemper, that was an awesome job and the food looks delicious. I'm sure that was the best HSR cook out ever, Congrats again Kemper.

Even with 5 WSM's I would think it too several cycles?? How were the cooks parsed out?

It's obviously an outstanding job. I have an 18 and a 22 and have done cooks on both at the same time cooking several different items. That seemed like a ton of work and wore me out. That makes your cook all that more impressive.
 
I started the night before & loaded up all the Briskets & Pork Shoulders. They cooked 14 hours till around Noon. Then I out the ribs on. They took 5 1/2 hours. The Sausages I cooked at the Event. I wrapped All Briskets & Pork Shoulders in Foil & out in coolers & stuffed with towels. They stayed Hot until I needed them. I shredded 10 Pork Shoulders & put a bottle of My Vinegar Based Pulled Pork Sauce to give it moistness. Then I applied more Rub as I tossed the meat. Then I had a Carolina Mustard Sauce for Sandwiches. I sliced up Brisket, Ribs, & Sausages right before the Event.
 
I shared this post with a buddy of mine and the 2 questions he had were: How long did it take you to plan out this cook? and "Who paid for all that meat?" I'll add to that: Did you enjoy the executing this massive cook? Would you (voluntarily) do a cook of this magnitude again?

Took me a week to plan. I collected $2000 in Donations to help pay for it. If I did it again I'd want some help. Too much work for one person. I did enjoy because I have confidence in my ability even though I've never cooked for more than 25 people before
 
The biggest cook I ever did was for my cousin's wedding in 10/2011. Not sure the head count, but I just did shredded beef & pulled pork, nearly a case (~45# each) from Costco.

You're a truly accomplished pitmaster now. I was wondering how it was coming along when you posted pics the other day. I was happy to see the success.
