My EWW butt

I've been missing my WSM. And since I didn't get to go to the BBQ fest in Lexington last week,I figured it was time to take matters in my own hands.
That is until I uncovered the WSM. Apparently I had forgotten to clean it! EWW! Needing to put the butt on tonight,I quickly broke out the scrub brush and hose. In ten minutes it looked (and smelled!) better! That's not going to happen again for a long time! Here it is rubbed with equal parts Neely's BBQ,Smokey Bones and McCormicks Pork rubs. Minioned the start with 4 good size chunks of hickory. I'll post some more pics tomorrow.

When I first saw this I thought "EWE Butt" and wondered where you got the mutton !

Looking forward to the pics. I need to get my WSM going as well.

OK,it's 7 AM saturday ,and cookers holding steady at 225*. Haven't checked internal yet.
Had a little scare last night. After putting the meat on,I failed to get the lid on squarely. Checked the temp after about 20 minutes,it was at 450! Holy schnikeys! Closed all the vents for 15 minutes and it was back to 275. Whew! This pork better be worth it!

OK,yet another issue. I went out about 8 and the temp was down to 170*. Looked in the door, and the coals had almost burned out! I threw what was left of the bag I bought last night, and drove to the store to get more. 15 minutes later,I was throwing handfuls of coals in the door. Checked it 15 minutes later and the temp was back up to 225* and the butt was at 175*. Like I said, this BBQ better be worth it!

Here is the butt after 17 hours. It's sitting in a cooler, double wrapped in foil and a towel.
Got a little sample off the grate. Oh yeah,it's been worth it!

Thanks all. Got a pan of doctored beans in the WSM now. Doctored with bacon, onions and some JD BBQ sauce. Very yummy.
