thanks. anyhoo, it was a thinish 8 lb brisket. cooked at an average temp of 300 deg using stubbs briquettes. used two small chunks of oak. at 194 int temp i did a probe test and decided to take it off. 6 hours. tented for an hour. considering everything it came out great. juicy with the thinnest part having just a bit of chew. surprised the heck out of me.
