A friend is getting married next week and tomorrow night is his stag. The caterer bailed out tuesday morning so I get a call telling me Im cooking for 50 guys. For whatever reason it didnt phase me at all. Went to the slaughter house and grabbed 85 lbs of boston butt then headed to the grocery store. 5 heads of cabbage, 6 bottles of ketchup for sauce, 3 bottles of cheap yellow mustard, a ton of beans and a couple bags of corn meal. Called my cousin and borrowed his WSM. Grabbed 3 chaffing dishes from the fire house, 40 lbs of Kingsford and 100 hamburger rolls.
The butts are trimmed and waiting to be rubbed. The slaw and bbq sauce is made. The corn bread and beans will be made tonight.
The butts will be cooked on 2 smokers. Mine has the old 3 tier modification with the bbq guru and et-73, dry pan foiled. The other will have two grates and the terra cotta planter bottom. 6 butts on mine and 4 on my cousins.
The stag is at 7 tomorrow night and Im planning on starting the smoke around 1 pm. Last time I cooked 6 butts on one smoker it took 23 hours and 15 minutes. Once at 190 they will and be double foiled, wrapped in towels and rest in coolers for a few hours before pulling.
