Multiple pork butts/shoulders

In the past I have smoked a few 6-8lb pork butts on my kettle and even up to a complete 17lb shoulder also and they have come out fine. They were time consuming as I used a smokenator insert and the charcoal had to be checked all the time but I had no issues keeping temps in check. I also have done larger turkeys, ribeye roasts and the like and I usually had more people wanting extra than I could do in one shot on the kettle so I finally got the WSM
Word has spread already through my wife that I bought a bigger smoker and I have a brother and sister in law who want me to make some for the day after Christmas and both want extras to take home.

Since this is the first " Big " smoke with larger amounts of meat are there any pointers? I can get complete shoulders for 1.49lb and they average 17-18lbs and was thinking of doing two of those but it takes more time. Other option would be multiple butts which Costco carries which run more per lb wise in the end but not as much bone/skin and fat weight either. If I went that route I could get 4 nice butts in the 30lb total range and use both racks on the WSM.

What kind of time would I be looking doing 4 butts in a WSM? Seemed like I could get them done at about hr per lb to 195 on the kettle.....Where a complete shoulder was more hr + per lb to get to 195.......

Just looking for any pointers on doing multiples at one time. Plan on using apple and cherry wood combo with a nice rub on Kingsford Blue briquettes for the cook. Not sure about using water in the pan as I have the clay saucer if needed in its place.

Suggest away.....Not a newbie to smoking but a newbie to multiples on a WSM.

It will take longer to get the smoker up to temp, if you put the meat on right away and you'll use more charcoal to keep it there. Besides that there's not much difference. I would go with the smaller butts so you get more bark. I would just foil the pan since the meat will be enough of a heat sink.

Did my first empty-bowl smoke yesterday at 275* and it worked perfectly. The highest temp 'spike' I saw was 280* (On dome thermo)
Don't even have a clay saucer, but I do believe I'm pretty much done using water. (temp control was easy & clean-up even easier)
 
Mike, I'll give you my thoughts from a 18.5 WSM: Its real tough to get more than 20 lbs on the top rack and thus, expect to use both racks. I've had tough times navigating this exercise, since the bottom seems to cook more quickly than the top. As you know, butts are forgiving, but with the top loaded down, you are going to have a tougher time judging when the bottom ones are ready to pull (unless you use a probe therm). I suspect, you'll pull the bottoms before the tops. Also, I've found that the top grate temp can be as much as 50 degrees off dome temp (generally, though around 25), PLUS I've found the bottom grate is a bit higher than that. Just keep your eye on it. Again, this won't be a big deal for butts, but its a chore if you try to mix and mingle other cuts.
 
My suggestion is to cook all the butts to the color you want. Then pull all to foil and after you foil, place the ones that were on the lower rack on the top rack and vise versa. The ones from the lower rack should be a little further along so you should be able to pull them first. I would probe one on each rack. After you pull the ones from the top rack you can move the ones on the bottom to the top, a little easier to check for tenderness, or leave them on the bottom. It is a little of a juggling act but you won't have any problems. Butts are hard to mess up too bad.

I did swap them from top to bottom half way through since two were smaller but they all came off at the same time in the end. I cooked with no water in pan and just a foiled clay pot and followed normal cook procedures and they came out great. Family took home the two smaller ones all shredded up and most of my sauce..LOL
