In the past I have smoked a few 6-8lb pork butts on my kettle and even up to a complete 17lb shoulder also and they have come out fine. They were time consuming as I used a smokenator insert and the charcoal had to be checked all the time but I had no issues keeping temps in check. I also have done larger turkeys, ribeye roasts and the like and I usually had more people wanting extra than I could do in one shot on the kettle so I finally got the WSM
Word has spread already through my wife that I bought a bigger smoker and I have a brother and sister in law who want me to make some for the day after Christmas and both want extras to take home.
Since this is the first " Big " smoke with larger amounts of meat are there any pointers? I can get complete shoulders for 1.49lb and they average 17-18lbs and was thinking of doing two of those but it takes more time. Other option would be multiple butts which Costco carries which run more per lb wise in the end but not as much bone/skin and fat weight either. If I went that route I could get 4 nice butts in the 30lb total range and use both racks on the WSM.
What kind of time would I be looking doing 4 butts in a WSM? Seemed like I could get them done at about hr per lb to 195 on the kettle.....Where a complete shoulder was more hr + per lb to get to 195.......
Just looking for any pointers on doing multiples at one time. Plan on using apple and cherry wood combo with a nice rub on Kingsford Blue briquettes for the cook. Not sure about using water in the pan as I have the clay saucer if needed in its place.
Suggest away.....Not a newbie to smoking but a newbie to multiples on a WSM.
