Did an overnite butt roast last night that was an unqualified success. Started at 5:30PM with minion method, 250 deg, 2 tri-tips and a 6 lb roast. Tri-tips came off at 150deg and were perfect. Roast went all night. Pulled off at 6:25AM (when I woke up). Meat temp read 217. Lid temp was still 275 deg!
Roast took about 30 sec to pull. Virtually no grease or fat left. Very moist meat. DELICIOUS!
