I sold out of the last case I cooked last weekend (75lbs raw 38lbs finished), so I'm cooking another case (75lbs again) and most of this is already sold. I put these on last night around 8pm and they're still chugging and smelling goooood this morning!

BTW, the bag hanging from the oil lamp is something my wife put up to keep flys away and it works great!
 
Larry,
If you keep cooking 75 lbs of pork this often the price for the rest of us will rise. Leave some for us.
Come to think of it, I've yet to use the bottom rack. I'll have to throw something on it this weekend just to say I've used it.

How much do you sell your pork for? Do you sell it fresh, or do you vacuum seal and freeze it?

Hi Pat, I sell it @ $10 per lb and pack it in 2lb bags. It's all vacuum sealed and frozen, unless I get a specific request.

Just remember to change those bags out. They will start to smell pretty bad if they sit around to long. Maybe something to do with the dead fly carcasses?
 
Butts are pulled and in the fridge until tomorrow and then will be vacuum sealed and froze. Total cook time was 17 hours.

WSM's are cleaned and the beer is flowing!!!

What do you put on your pork.
I have been using the same thing since after my first cook because I found something I really liked, I want to try something else for tomorrows #15 pork butt cook.

I am cleaning off the middle and top grates with the leftover coals, they'll burn everything off
