I'm going to hickory smoke a butt and a rack of ribs this wknd. The last time I did this I was unaware of the "mopping technique." Since, I've also learned of foiling the ribs the last 30 mins or so to tenderize them. What's a good mopping starter recipe I can use; then add or take away from? I'm a total newbie at this guys, so be easy with me. I already have some cider vinegar and brown sugar in the house. Plus a few spices like paprika, onion, garlic, chili chipotle, etc. Also, how often should I mop the ribs? I'll be going to the store tonight to pick up some groceries, so your responses will add to my list. Thanks a million!
