Mopping recipe needed

I'm going to hickory smoke a butt and a rack of ribs this wknd. The last time I did this I was unaware of the "mopping technique." Since, I've also learned of foiling the ribs the last 30 mins or so to tenderize them. What's a good mopping starter recipe I can use; then add or take away from? I'm a total newbie at this guys, so be easy with me. I already have some cider vinegar and brown sugar in the house. Plus a few spices like paprika, onion, garlic, chili chipotle, etc. Also, how often should I mop the ribs? I'll be going to the store tonight to pick up some groceries, so your responses will add to my list. Thanks a million! :cool:

Chris has a good rub and mop recipe for butts, it should work well for ribs too.

Southern Sop
Remaining Southern Succor Rub (Important: See text below)
2 cups apple cider vinegar
1 cup water
3 Tablespoons ground black pepper
2 Tablespoons table salt
1 Tablespoon Worcestershire sauce
1 Tablespoon paprika
1 Tablespoon cayenne pepper
Warm ingredients over low heat, stirring occasionally.

Yeah, that's what I'm talking about; already have all the ingredients 'cept the turbinado sugar. Too be honest, I never heard of it. Does it burn very easy? I always used brown sugar, but I'll try the "tried and true" recipe's. This won't have a very strong vinegar taste, will it?

The WSM has arrived and so has the ET 732. For one butt and a couple of ribs tomorrow, I just might use the kettle. It's already set up and ready to go, and my back is still recuperating from surgery last week.
