Monday Rib Cook


 
Looking good.....and you figured out how to post pics!!! Right on.

I picked up a big ole rack of spares today....I'm gonna cook em up tomorrow.

How big is that rack and please post how long they cook...last time mine were on like 5 hrs but still weren't tender enough. So I'm trying not to duplicate those results.
 
Nice pics Ed. I did a Monday rib(St.Louis) cook today myself. It went a bit different than I planned....put them on MM, came up to 240 in about 30 min. At 3 hrs I foiled them for 1/5 hrs at 230. Removed the foil and they were done but a bit too soft.
Left them on for a half hour and took them off.
Maybe I could have left them on a bit longer but was afraid they would dry out too much.
Five hours total...I was figuring on six. No problem, we just ate a little earlier than usual. Mmmmmm, good! Tomorrow, eat the second rack!
 
I have had some pretty good luck with these longer cooks. I have about another hour and a half before I take them out of the foil and firm them up a tad.

Thanks Bill I appreciate that. As far as what you are suggesting I do, hell it took me almost all day to post what I have posted. I will have to try that some time when I get the courage.
