Minion & Rogers Smoked Sockeye Salmon

Was at Costco yesterday and they had a load of wild Sockeye come in, it was beautiful. I used the recipe linked below. They also had fresh mussels in. Grabbed both.

One of the best Salmon dishes we have ever tasted.

All the ingredients lined up for the dry rub, 1/4" thick and in the fridge for 2.5 hrs

Pulled from the fridge and the rub washed off in cold water, the meat turned a beautiful red

Paper toweled dry and left to sit in fridge for an hour to become tacky dry, the explanation for that is in the link, seasoned with the dry cooking rub
(minus the salt)

Smoked at 300 for about an hour to 155 IT

The CEO made up a batch of Watermelon Margaritas for us tonight. Helps to keep focus while cooking you know.

One home run after another, Bill. That salmon is beautiful. Going to have to give in and try mussels soon. When I was a kid we used to fish off the rocks and we used mussels as bait. Never really got over that. Love the Garlic Mashed too!
 
It may be my southern (Texas) pallet.. But sockeye salmon is a bit too fishy for me. It looks great on the Weber though!

This is out of this world! Pics are great, fish is treated with serious respect, and the drinks look DELICIOUS!
 
Another great cook Bill, the planks look dry, I guess there is no need to soak them when they are so far from the heat source? Watermelon Margarita?, now I have to make some this afternoon

Thanks guys, much appreciated, and I only wet the planks for a few minutes, being on the top grate of the WSM not hot enough to burn.

We used them too Cliff and shrimp also, don't you eat shrimp?
 
Great looking meal my friend, I will have to try that method soon, I'm sure it won't look as good as yours. What kind of planks were those?
