Thank you. I posted in my kofta kebobs cook the skewer holder I am using which makes these kebobs juicy versus putting kebobs on the grill grates which tend to dry kebobs out. This cook came out really well. I’ll make some coal height adjustments on my next cook which should improve this recipe just a little more.

I’ve been wanting to get better at Mediterranean kebabs for a while now, I will give this a go Saturday. Need to find some Aleppo pepper.

you should have many mediterranean markets near your area. i use and seek this brand as they have some of the freshest and best spices and herbs in the market and they're kosher which means they're also a high quality product:


and your kabos must not be on the grill grates. they have to be suspended so as to not dry out the chicken. i think i listed/linked the kabob rack i am using in this cook. and one small adjustment i will be making the next time; getting my coals to a slightly lower level than at directly below the cook grate. this way the heat is less intense and the cook time will be a little longer but more even on the protein. radiant heat is better than super-direct heat for this type of cook.

i've had gthese for years and they're great quality (SS) and work perfectly for stabbing, i mean skewering solid foods onto skewers. they do well with U13 shrimp up to 31-40's, veggies and just about all proteins. and the clean up incredibly easy being SS.
