Marinating this for dinner tonight.

SPG, Aleppo pepper, sumac, za’atar (run through the slice mill), red pepper flakes.

EVOO, lemon juice, ACV, red wine vinegar, water.

Will serve with some sort of rice, grilled tomatoes, roasted red peppers, olives, cucumber and Greek feta.

And some adult beverages TBD.
 
Cleaning the freezer a little more tonight, short rib stew from a couple of months back, planning on celebrating our 32nd anniversary tomorrow, just a couple of days late.
Maple cinnamon seared scallops with “Butter rice” and a nice bottle of champagne. Wife had a health scare last week which threw the dinner out of kilter so, no big worry, I like a nice Monday night dinner!
