I know I'm asking a lot questions but I have spent a lot of $$ for me to learn to smoke my own meat , so I want to get this thang down.. Ok, is there any meat that I should not inject
with flavor, or any seasoning I should not mix?

Sonny, no need to apologize for asking questions. The more you ask the quicker you learn.
The only BBQ cuts that I wouldn't think about injecting are thin cuts such as ribs. I see no need to inject Chicken or Turkey thighs but the breasts are fair game. I'm not sure how to answer your second question and I'll leave that to someone with more knowledge.
You might consider posting this on the BBQ forum to get more answers.
