Maple wood

Anyone use this and what types of food is it good for? I was on the hunt for some apple and cherry last weekend and picked up some maple. Figured I would give it a try for the $4 a bag. Opinions welcome. Vince
 
Yes, I have some. I used it for some canadian bacon recently...very nice. I find it stronger than apple, not as strong as oak...somewhere in between.
 
One of my absolute favorite woods. It is nice and mild as Don said. Not the most mild wood but pretty close. I use it on pork very often and always when I am smoking bacon. It is also good on small amounts with poultry.

The next time you fire up a pork butt, try a 50/50 mix of hickory and maple. Maple good on anything pork.
 
Lee, that mix sounds right on. 50/50 apple/hickory is my standard for pork, since maple is stronger than apple one should need less hickory....I will give this a try next time. Apple/hickory is just so darn good it is difficult for me to stray from something I love. However, the smell of maple wood smoke is fantastic.

I did do a maple/hickory mix 60/40 or so for a high heat chicken, very good results. I will keep maple as a standard item in the quiver.
 
Thanks guys. I figured I would ask because I never hear about anyone using maple. I guess I will have to experiment with it some. Now if I could just find some apple locally.......Thanks for the tips. Vince
 
I have used a bit of maple, usually with some apple, on some pork shoulder, ribs, and chicken.

We installed hard maple floors the old-fashioned way, and I saved the cut-off ends and reject pieces. (I checked with the mfgr - it is raw, kiln-dried maple, with no chemical treatments.)

I even used a bunch of it to cook some steaks - the stuff really burns HOT! (the glowing coals are even hotter).
 
Anyone ever try to use maple on brisket? I have a small 3.5lb brisket flat and some spares that I will be making tomorrow. Ideas????

Maple can work with meat. Certainly works with pork. I've used it paired with hickory for example and it worked fine. Not my first choice with meat, but it does work.
