Maple Orange Duck

Bill-that looks fantastic. I've been cooking potatoes in duck fat the last couple of months and I can't stop. Nice to see others cooking in the snow last night.

Great looking meal, Bill. Crosshatching on a duck (or any bird) is something I've never heard. Makes perfect sense and came out great!

Thanks Guy's, in ref to the cross hatch cutting it has worked superb for me rendering out all the fat on the duck, I used to poke holes in it but I would still have pockets of fat under the skin. Now I also make one inch slits under and around the leg and thigh. It is good stuff, the CEO just smiled all through dinner and made nice sounds. I did good
