Mandarin Orange French Toast

Want something really delicious to serve your over-night guests during the holidays for breakfast? This is it!!!!!!

Mandarin Orange French Toast

1 can (11 oz.) mandarin orange segments in syrup
1 TB. grated orange peel
1/2 cup orange juice
2 tsp. cornstarch
1 TB. brown sugar
1 tsp. vanilla extract
Dash nutmeg
2 eggs, lightly beaten
1/2 cup half and half
4 slices French bread (1/2" thick) or thick sliced white bread
2 TB. butter
1/4 cup sliced almonds, toasted (optional)

1. Drain syrup from mandarin oranges into a saucepan. Stir in orange peel and juice, cornstarch, brown sugar, vanilla and nutmeg until blended. Cook, stirring, until sauce thicken slightly and becomes clear. Remove from heat. Add mandarin oranges.
2. In a pie pan combine eggs and half and half until well blended. Dip bread in egg mixture, saturating both sides. Melt 2 TB. butter in a skillet until hot. Place soaked bread in skillet. Cook until golden brown on each side.
3. Place 2 slices French toast on each plate. Top with sauce and almonds if desired. Serves 2
