Man Wiviott has a tude but.......

When I started smoking on the WSM, I started with the recipes at this site.

Having never read any other books, I've found these recipes incredibly easy to follow, and have never had a bad result. Like many poeple have already stated, they serve as great foundations, which you can tweak and customize as you see fit. Hope this helps, and have fun!

Amen brother!!!!!!!!!!!!!!!

I was thinking about this some more today and have a couple comments.
For one, here's a video of Gary making ribs with John Kass, a columnist familiar to most Chicagoans (the interaction at about 2:50 is great).
I think it conveys his personality pretty well:

God, what I wouldn't give to BBQ on the Tribune Tower's terrace.

The other is that I really hope beginners try to find lump charcoal. I have become fairly snobbish in this regard but it is for good reason.

I am a big fan of the recipes on this site as well. After a few years of varied degress of success smoking on a kettle, I found this site, improved smoking on a kettle and graduated to a WSM. That being said, I enjoy trying different methods and might read the book one day. I do have trouble following exact directions though...

Brian.
I would agree that since you already own a copy just follow it. I read some of the steps when it was still available free on-line and I thought it was useful, but that was a few years after I started to smoke. Most that have followed the program seem to recommend it, so it certainly couldn't hurt to try it.
If you haven't had a chance, scroll down to the Q&A section where Gary discusses his book and give that a look.

Good luck!

Tim

As a rookie, I went straight for the pork spare ribs, skipping everything else in the book. They came out awesome.
Then i bought a Stoker, and a smoker jacket, veering way off his course.
My opinion is knowledge and science will help you in your BBQ.
Wiviott has a lot of good info, and I still refer to the book often.
I like the fact that you need not tend the vents to adjust temperature, with his instructions, you just follow predetermined settings.
That's irrelavent to me now since I got the Stoker, though.
Just ignore his insistence on following his religious like zeal, and use his info to your advantage. My opinion.
