I have been doing jerky on my WSM, and get 100% great results ever time using the three day method. (See link below).
I know it's of no use if you want jerky.....NOW! But if you have some time this will work every time, honest.

Great choices, and sounds like a perfect Man Day! Love the fruit sauce, and filet looked like a beautiful piece of meat before and after the cook. Surprised you needed the knife for any of it.
Great Cichlid tank. I've kept tropical fish all my life, but never gone beyond a 20 gal, due to space issues, but have kept multiple 10 and 20 gals tanks at the same time. I tried a small cichlid 20 gal tank many years ago, but had to stay with smaller fish like the Brichardi.
Great tank and great food.
