Making Pulled Pork a Week in Advance?

I am making 3 butts for a party on Dec 5. I don't want to make them the day of the party and I work all week prior. If I make the pork on Sunday after Thanksgiving, will it stay ok in the fridge all week or should I freeze? I use a red BBQ sauce not North Carolina vinegar Sauce by the way if that helps.
 
I'd cook, pull, vac and freeze in 1 lb packages, rewarm in simmering water for about 15 minutes or so....it is so easy to be on the safe side.
 
Yes, freeze. See this post, and the post of mine above it on cooling quickly and thoroughly. Just finish by then packing into Ziplocs, pressing out the air; freeze. Remove to the fridge to thaw a day or two prior to reheating.

(Note: I serve a typical Q sauce too, among others, on the side. Regardless, I still use the vin finishing sauce as noted. Not much is used as a finisher, it ties and stabilizes moisture, flavors and textures, and it works with the other sauce(s) I serve - or alone, if the diner does not want to add a sauce.)
 
Sounds like a perfectly good excuse to run down to Sam's and justify a Food Saver to me

Well worth it. The Q will keep a long time frozen in their vaccum bags and you can drop a bag in hot water to reheat for the party.

Could not agree more (well, except on the Sam's Club...Waltons don' get any of my $)....I am a huge fan of the Food Saver, had one for 15 years or so (on my second now). Very well worth the investment, I have not yet found a better way of storing food in the freezer.
 
Rob, if you're going to do any amount of smoking then getting the food saver makes sense. If it's in your cash flow get the dual pump model: Game Saver Turbo Plus. List price is $279

Besides the stuff you smoke you'll start buying meat in bulk and sub packaging it with the vacuum pack so it lasts longer. **** I've even vacuum packed food I've dehydrated for 3-4 day backpacking treks.

In Texas Bass Pro Shops, Cabelas, and Academy sporting goods all carry it in stock.
