Looks like it's pretty standard "umami" food additives. I personally wouldn't go that route for home cooking but I see no harm in it. I don't know how to apply it to sausage.

Hi My briskets so far all have come dry, they were tender & tasty. They passed the bend & pull test and they probed like butter.
