Made my sauces.....now what?

How well do homemade sauces keep once they are made? I have a few sauces that I bottled in Mason jars and put in the fridge. The question is, how long will they stay good?

I made a clone of Bone Suckin' Sauce, a Cheerwine-based sauce, and the Lexington Style sauce (all recipes found on this site). All sauces were cooked. I just poured them into the mason jars after we used them and have them stored in my fridge.

BTW, I'm not looking for long-term storage, but something that can be used again....say in a month or two.

High-sugar and/or high-acid sauces should last a month or two in the fridge though, depending on ingredients, they might suffer some flavor loss after a few weeks. It's best to use sterilzed jars if you're fridging.

Reheat before use and reheat well.

For best long-term storage of thicker sauces, FoodSaver and freeze.
