Smoked pork loin on my old Brinkmann Pitmaster, always turned out like pork leather. Hadn't done one on the WSM so did this little fellow ( 3 lb) Thurs evening just to see. Injected with a mixture of Italian Dressing, Tex BBQ Original, Garlic Powder and Slap Yo Mama seasoning. Rubbed with Tex BBQ Original.

Cooked at 250-260. Added sweet potato strips with EVOO, butter, nutmeg, cinnamon and sugar in baby cast iron skillet at the one hour mark

Pulled the loin at 145 but had to leave the tators on for awhile longer.

Removed loin from cooler and sliced. Juice everywhere.

Plated loin and tators with green beans cooked with thyme and brown sugar.

Everything was delicious. Pork loin is definitely on my list to do again. Don't know why two pics are larger than others. Thought I resized them all. Also got pics 2 & 3 reversed. I'm learning.
