My schedule got rearranged, so my low and slow heat chicken cook, I was to do today, was done as a heat heat whole chicken cook yesterday.
I only brined the whole chickens about 1.5 hrs.
(2) 4.75 lbs whole chickens.
Cooked at an approx average temp about 375 lid.
No h2o in pan.
Used Bryan S.'s lid agar trick to keep the temps up. Actually temp got up in the 425 lid range while I was away from the cooker.
Couple of observations between low and high heat whole chicken cooks.
A few weeks ago I did (3) 3.75 lbs whole chickens low heat h2o in the pan. yesterday's cook as above.
Seamed the chicken was a litle more tender, low heat.
I was amazed at how juicy the breast was high heat. Also he skin was more crispy as you might expect.
Also seamed like the smaller 3.75 lb chick had bigger drumsticks they were more plump if you will.
Also seam like the bigger 4.75 lb chick had noticably bigger breasts and it seamed like the drumsticks were smaller in proportion. I don't know that's what it seamed like to me. In other words you get more breast meat per lb with the slightly larger chickens ?
Anyone notice the same or not ?
