Have balked at buying a smoker for years because I was stuck on the idea that I needed to spend $2K to get something that didn't take constant baby sitting. Had a friend who had a WSM and hated, he obviously had no idea what he was doing. Then talked to a friend of a friend who competed on WSMs. Bought an 18.5" 3 weeks ago and have have cooked ribs, pork shoulder, salmon, and wings. Once I get my temp I walk away. Wish I would have gotten one years ago.
