Looking for a simple no bake mac and cheese recipe...having no luck searching


 
if you google for no bake mac and cheese, a bazillion recipes come up, most with excellent ratings.

Simple sort of kills it though. I found one with squash in it. I like squash but in mac & cheese? <ewwwwww>

Hope someone comes up with something.

BTW, have you tried using tomato juice on it instead of ketchup? Heavenly.

Here is a simple no bake recipe that my wife and I love. Enjoy.

Uptown Macaroni


One 5 oz package of Boursin cheese (your choice of flavors)
3/4 cup elbow macaroni – cooked according to package directions

Let cheese come to room temperature

Cook and drain macaroni

Add cheese to pan and stir to mix well – serve with freshly ground black pepper

If you want it a bit more decadent, add either 1 tsp of butter or 1 tsp of truffle oil to the macaroni before mixing with the cheese
 
Stove-top Mac & Cheese: Adapted from Joy Of Cooking.
Bring to a boil in a large pot:
12 c water
1 t salt
Add and cook until tender:
2 c elbow mac (8 ounces)
Drain and return to the pot. Add:
4 T (1/2 stick)unsalted butter in small pcs.
Stir until blended. Add and stir together till smooth:
One 12 ounce can evaporated milk
12 ounces extra sharp cheddar grated
2 large eggs, lightly beaten
1 t dry mustard dissolved in 1 t water
3/4 t salt
1/2 t ground red pepper, or to taste
Set the pot over low heat,and stirring constantly, bring it to the first sign of a simmer, 5-10 mins. It should thicken noticeably, but can take a few minutes more.
Do not overheat or the sauce will curdle.
Serve immediately. Very creamy and cheesy!

Several good suggestions here, but my addiction is Kevin's recipe, without the bread crumbs !

Dang...now you've made me crave a nice side of mac and cheese again
