Linguica? Calling j biesinger(?)

I'm sure everyone has seem J Malkovich talking to his phone by now, but I finally looked up Linguica, thinking it was pasta! Now of course I need to make some, as it sounds (after a thorough 5 minute google search

like a sausage right up my alley.

What I don't have is a decent recipe, nor do my usual sources (Ruhlman and here) seem to have any. I did however find a post from j biesinger back in early 2010 that referenced him(you) making some. Would you mind sharing your recipe? Or if anyone else has one that they could a share, it would be greatly appreciated!

Both of these call for 10-12 cloves of garlic.

I know when I made Wiejska, it called for 1/4 cup of chopped garlic. I used 12 cloves to get that amount.

It was super super garlicky. A week in the freezer mellowed it a bit but it was still strong.

Ignore the liquid smoke if you wish (I would).

I have not tested any of these.

If you google "linguica", there are quite a few hits.
 
I made it once, a while back. I could sift through my notes and see if I wrote anything down, but as I recall, the recipe didn't blow me away.

I have a few books that I could look through if you don't find a good recipe online.
