It's 6am. WSM has two butts on it and been running steady 220 for an hour. Three slabs of st louis ribs are trimmed and rubbed will add them in an hour or so.

Man, wish I could say the same. I've got a pair of 8 lb butts on there with an 11 lb brisket down below, chugging at 245 right now.

It's cooking well, but there's a massively strong thunderstorm system moving through Atlanta today, so I'm smoking in the garage with the door open. Hope my guests still show up today.

Just my luck, too. I've smoked probably 8 times and it's rained 6 times.
 
I did the garage thing last weekend during a 'Noreaster. (It's a free-standing garage, about 20 yards from the house.)

Now, after a 19 hour smoke, I've got the best smelling garage in town!

The ABT's are stuffed with cream cheese 4 cheese mix and red onion then topped with the piece of bacon.

Here are the butts chugging along at 180.

Should be pulling them off the 2 hours or so then rest for 1 hour.

Oh my gosh...
Let's see. 30 minutes to drive to the airport, $300 for the round trip ticket.... Another $100 for the car rental....

What time did you say dinner is?

The butts got pulled after they sat for an hour. The ribs were just a tad overdone. (falling off the bone)

The peppers were a hit and they weren't jalapenos. A milder pepper I found at Sam's. Not sure what they are called.

Tomorrow I have to do all the extra pieces from trimming the spare ribs down to st louis' Also have another full pan of peppers to throw on.
