Leg o' bambi ?

My brother in law called me the other day and asked if I had any room in my extra freezer. I said sure, and he said, I will see you in 10 minutes. He showed up with various venison cuts, which I am looking forward to. However, he also showed up with a leg quarter.

I have no idea what to do with this thing. Would love something on WSM, I could get it on the 22" I am sure (might have to stand it up). But if that's not the route, I would go with another technique for a better end product.

No hurry to get it cooked anytime soon since it's in the freezer. Any techniques ?
 
I did a quick search and got some ideas, most of them call for roasting it in the oven, but one looked like it could be transferred to the smoker.

Season with salt and pepper and wrap entirely with bacon.. Cook at around 350 for 20-25 mins/pound, plus an additional 20..

Others I have noticed include marinating the venison in red wine over night etc.. could play around with some different ideas and try..

Good luck, take lotsa pics as my in laws are sure to have some when I get back out east so would like to try something when I am there

cut into chunks. marinade in a mix of soy, lemon juice worschester, water, pepper. wrap with bacon, grill till med rare
 
JS, venison is to lean to smoke will dry out, you are better off cooking the leg quarter in la caha china type cooker. You can also wrap it up in foil and cook in the wsm.
