leftover ribs, my new favorite

i made two racks of baby backs yesterday for my wife's 'return home' celebration (also made tater cups, corn, pineapple)

anyhoo. my family of 5 only ate one rack, so tonight was leftover night.

I pulled the bones out (they came right out) broke off a slab of meat about the size of a slice of bread.

I drizzled on some spicy bbq sauce and added another slice of bread.

it was like a McRib, but SOOOO much better.

I got to thinking, a rack of ribs is 10 bucks and serves as one meal for my family. It's cheaper than steaks. I think i'll do 2 or 3 racks of ribs every weekend, as well as a butt every other.
 
Tell me about it Troy. I cooked up 6 racks of ribs for my family, and some out of town family. Was looking for a total of 7 people, but only had 6 people. We didn't even finish off 3 racks. So I had plenty to send home with people, and still meat in my fridge. I have been eattin' on warmed up ribs, cold ribs, and still have some left over. God I love BBQ!
 
That Rib sounds tasty. Next time you do this take a picture. I can't quite imagine getting the bones out of baby backs and leaving the meat intact. That's quite a feat.
 
A little off topic perhaps but, outside of the quarterly family/friends get together I only have a wife and 2 year old to eat what I cook. Whether I cook 4 racks of ribs, a butt or a brisket, I have lots of leftovers. I've found that a crock pot is great for chilis, stews, soups etc... that can then be frozen. if needed, for later reheats in the crock pot again. Makes an easy mid week meal when time is an issue.
 
It's usually just SWMBO and me unless we have company. Baby backs come three to a cryovac pack and we cannot even finish one rack. The arithmetic is pretty clear. I refrigerate some and freeze the rest. They're great reheated. I just found some in the freezer last night and will have them for dinner tonight.
 
What's the best way to reheat ribs without losing the smoke ring. In foil or not, high oven heat or low, microwave?
 
Do not foil them if they're going into the microwave! =8-O

Other than that, I'm hard pressed to say one way is better than another. Some times I microwave them. Other times I'll put them in a cast iron pan with a lid and then put the pan on low heat until they're ready. Either way they're good.
 
i don't have a microwave, so mine get reheated in the oven

i put them on a cookie sheet and cover them with foil. if i'm feeling fancy i'll spritz with a little apple juice.
 
I reheat my ribs like I do my thickly-cut meatloaf slices. Either on the grill (medium or medium-high heat) or under the broiler (not the closest distance, maybe 4 or 5" away from the heating element). I like a barely crispy, but not a crunchy, finish. You can glaze before reheating or not.

Outside of the slow cooker method I posted earlier, I just toss them in foil and reheat in the oven at 375. If I think of it, I'll add a little liquid, perhaps even a little left over rub. What I enjoy best is using buttered bread as my side.
