Last minute leg quarters and fatties

So, my wife told me to go get another WSM...I love her...

anyways, got it together and need to get it sealed up some...so I've got some big old leg quarters on it now...and I'm defrosting some fatties right now to stick on there too...

Also in the picture is my 6 year old princess...she's "helping me make a rub for the chicken" out of leaves and grass...she's a big helper...

Here's the chicken off the smoker...the skin was really tough...don't know what to do about that...anyone have any suggestions?

Also, here's the fatties...one's Country Mild Jimmy Dean and the other is Jimmy Dean Maple...both wrapped up with some bacon...

Not much for a smoke ring...there's a little one there, but they sure are tasty...we'll be slicing and frying some of them up for breakfast tomorrow...

Maybe run the smoker at 300 for chickens?

Tony I did run them at 300. I didn't sauce them at all. Just rubbed them and I think that might have been the problem.
