I have a 9.5 lb brisket and 2 boneless butts (8 lb and 6 lb). How should I handle the timing for this cook to get it done at 4pm tomorrow afternoon. I was thinking that the brisket will take about 12 hrs. The butts about 9 hrs. Does this sound right? Should I start everything at the same time and just pull it off as it finishes or put it on at different times to try and finish at the same time?
