lamb shoulder


 
I have never tried lamb smoked. I have tried to grill some lamb chops and really didn't care for the meat. Everything I have been reading is that if you are cooking low and slow, 225 degrees for 5 hours. Hard to find that cut of meat here. But I am going to try and smoke some venison this season.
 
gave the lamb a rub of garlic, ,rosemary, ,oregano, salt, & pepper! got up this morning at 5.30am with the torch to get it all up and running. (steped in dog crap) not happy! been going 10 hours now, and sitting on temp! neighbors must be loving the smell! haha
