Labour Day Weekend cooks (beefs and chickens)

Honestly its been a cycle since I meandered out to actually cook some stuff this past weekend for the family.

Friday night was a spatchcocked chicken with some garden beans and noodles. This guy was cooked on cherry wood which was delightful.

Then on Sunday my wife asked me to pop on some beef back ribs (as she does frequently on Sunday's). My daughter asked for some cheese filled potato patties, which I can't really argue against.. The ribs were run on maple wood.

Certainly, it’s her second favourite potato delivery device!

Basically cook the potatoes and mash em up and season it up as you would but try and keep it on the dryer side. Then add flour to combine to a dough (basically a non egg gnocchi dough). Divide into equal sized balls, flatten and form into discs around a knob of cheese. Pan fry and enjoy!
